Heavy Heart

I had plans to post Friday Letters today but that doesn't even matter now after hearing news of the horrific shooting that occurring in Connecticut. How could someone even think about hurting innocent children & adults? I had to turn off the news because I just couldn't watch. My heart aches for the children, teachers, staff & parents. My thoughts & prayers go out to everyone affected by this horrible tragedy.

 

 



Three Years

To My Precious Daddy--

 

This day will always be one of the hardest days of my life. I remember this day like it was yesterday & here today it's been three years since I last seen you. I remember getting up that morning getting ready to visit you in the hospital where days prior you were awake, talking, & watching the bears game with mom & I,  we left that day with hope. Hope that you were getting better & would be able to come home soon with us. Harsh reality hit when I got a phone call from mom saying that you took a turn for the worst, that you were fighting for your life. I still to this day don't get how everything happened that you were awake and talking days prior and then all of a sudden you are hooked up to a machine breathing for you, I still don't get it. Some days I can't wrap my head around that you are gone, I really cant. There are days where I just want to fall to the ground and cry, but I don't because I have to be strong for myself and for mom. I have my moments where I do cry when thinking about you not being here, but it doesn't last long because I think of all the times it was you, mom & I and I laugh because we always had a good time together. They say with time it will get easier & yes in a way it does but most of it's a lie because the pain of missing you will always be there, that will never go away. I have not one single regret about dropping out of high school to take care of you, most people thought that was the stupidest thing I have done, but I don't. I know in my heart it was the right thing to do, I needed to be with you. We spent every moment together for 3 years & I cling to the memories we shared together. I still wake up sometimes to go look for you to be sitting in your recliner, drinking your coffee, & waiting for me to wake up. Then reality hits that will never be and it hits me like a ton of bricks. There are days I think that all of this isn't fair,  it's not fair that you ever got sick that day in June seven years ago, it's not fair I lost a part of my father I once knew that day, that our world turned upside down when we found out you lost your speech to a stroke, that you missed me getting my GED a month after your passing even though I know you were there and so so proud of me, that I will not have my father walking me down the aisle and giving me away on my wedding day like I always dreamed about, that you are missing birthdays, anniversaries & holidays, that my mother lost her husband and me losing my father, sometimes it's just not fair. Today & every day I remember you dad, you. I will never ever forget you & the father you were to me. I promise to take care of mom & to make you proud. I miss you so much it hurts & I love you more than you know.

Recipe-Buffalo Chicken Dip

I'm sure everyone has either heard or has already had this amazeballs recipe, & if you haven't go make it right now! I will be making this as an appetizer for Thanksgiving!

What You'll Need-

Two 10 ounce cans chunk chicken (I use Tyson)

Two 8 ounce packages cream cheese

1 cup ranch dressing

3/4 cup hot sauce


Directions-

Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker.( I do not transfer to a slow cooker, I just transfer to a serving bowl & it's good to go. If it needs to be heated I heat in the microwave.) Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers. I serve this will the King Hawaiian bread and it's delish!!

Oh & if you seen my previous post on the Pumpkin Pecan Cheesecake & wrote down the recipe please go back to that post and write down unflavored gelatin, you will need this for the pumpkin mixture I somehow forget it, I'm sorry!


 Happy Day Before Thanksgiving Ladies!! :)

Recipe-Pumpkin Pecan Cheesecake

Since Thanksgiving is right around the corner I thought I would share this awesome recipe! It's a pain in the butt to make but it's worth it, trust me! 

Here's what you'll need-

Crust-

I always double this because it's delish!!

3/4 cup finely chopped pecans

3/4 cup graham cracker crumbs

1/4 cup sugar

1/3 cup butter, melted


Pumpkin Mixture-

Two 8 ounce packages cream cheese, softened
2 packages unflavored gelatin (I buy the small box of Knox Original Gelatine, it has 2 pkgs in it & is the amount you'll need)

1 cup sugar

1/2 teaspoon nutmeg

1/2 teaspoon allspice

2 1/2 cups canned or cooked pumpkin

2 cups whipping cream, whipped


Directions-

Crust-

Combine pecans, graham crackers crumbs, sugar and melted butter. Press onto bottom of 9 inch springform pan. Bake at 325 degrees for 10 minutes. Let cool.


Pumpkin Mixture-

Soften gelatin in water; stir over low heat until dissolved. Combine cream cheese and sugar; mi at medium speed until blended. Add cinnamon, nutmeg, allspice and pumpkin; mix at medium speed until blended. Gradually add gelatin to cream cheese mixture and mix until blended. Chill cream cheese mixture until slightly thickened, about 20 minutes. Fold in whipped cream; pour over crust. Chill until firm & Enjoy!

Blog Makeover!

I've been pretty quiet around here lately, for a good reason! My blog got a make over!! I originally thought I could design it myself, but I'll be honest I'm pretty dumb when it comes to designing a blog haha.

I'm loving that I'm off work today, even though it's raining outside, it's the perfect day to cuddle up on the couch and do nothing all day, which is exactly what I did!

Weekend Wrap-Up

Friday--

I worked til 7, yuck. Although I can't complain because I do love my job.

Normally Friday nights are my "lazy" nights because by the time Friday rolls around I'm burn out from working all week.

As usual this Friday was no different.

I came home ate dinner & got in my comfy clothes!

My mom & I always watch Say Yes to the Dress together every Friday, it's tradition haha. I love that show but seriously some of these brides I always think what are they thinking because some of these dresses they pick out are hideous! Anyone else feel that way?! Sorry I'm not sorry ;)

Saturday--

In my family, we have claimed Saturdays as girls day unless one of us has something going on. My two sisters always come over to my house with their kids (my nieces & nephew) No boys allowed besides my nephew haha, poor thing is always the only boy!

We always doing something fun and we are constantly laughing.

We made a few Halloween crafts, my sister is the crafter in the family & is always thinking of something. She made a pumpkin out of the mini glass blocks(the ones you use for windows). I will have to get a picture of it once she finishes it and do a it DIY tutorial. We watched the movie Something Borrowed...anyone ever seen it?! It's one of my favs!

We always have dinner together too, my sister or mom usually cooks & I make dessert normally.

We decided on homemade nachos, that were delish & my sister made a cake with this frosting she claims is awesome, needless to say it didn't turn out the way she had hoped haha.

After they left my mom & I tried to get caught up on our DVR'd shows. We watched Giuliana & Bill, I absolutely love them, they are hilarious & the perfect couple!

 I'm so happy they finally got their miracle baby after all the struggles they have been thru!

Sunday--

Sunday's are always my mom & I's day together, always. We always go to church together. Going to church every Sunday is something I will never forget about my childhood. My dad, mom & I would always go to mass together and my dad would always treat us to brunch. Now that my dad has passed, going to church was something that really helped us the weeks following my dad's passing and still helps me today, it just grounds me, I love it.

We usually run our errands after church which always includes a trip to Target, seriously that store is my obsession. I can never go in there and buy just whats on my list, it's always more....but everyone has that problem right?!

We actually didn't go to Target, major sad face, instead we came home & relaxed the rest of the day.

It was amazing!

Essie-Buy Me a Cameo

I tried this trick I've been seeing on pinterest,

you spray Pam cooking spray over nails after you have finished painting them, wipe off and your nails are supposed to be completely dry. Now I always have this problem, I wait forever for my nails to dry and go and do something and wreck my nails, huge bummer. I thought why not try it, I sprayed it on my nails, waited a few minutes (I've seen you can wipe them right off, but I just wanted to be safe), washed my nails off, and of course I touched them thinking there's no way this can work, but they were completely dry! I was shocked, but definately will be doing this from now on. Ladies it's a must try!!

I ended my night watching Married to Jonas on E! I was never a big fan of the Jonas Brothers but when the previews were coming out, it looked good! Turns out it's an awesome show, I love it!

First Blog Post!

After reading all of these awesome blogs for months, I have finally decided to start my own! I can't wait to make some "blog" friends, as I have seen through other blogs how great the blog community is! I can't wait to document my life through this blog and I can't wait to look back at this blog years to come! So here's to starting my blog...
